MC 2100 Manual Choke help

Guys,

I've recently changed from an auto to manual choke on my AMC 360 as mine wasn't functioning properly, now the choke is working perfectly however I think the engine is running a little rich (fuel smell, and grey dry soot from the exhaust). Any advise on what to check or adjust.

Its a MC2100 running no ERG lines, the heat tubes have been removed and the hole where the heat tubes went into the manifold has been blanked off.

Any suggestions appreciated
